Orange Polenta Cakes {GF} //


Gluten, eh? It’s a troublesome little minx, now more than ever it seems. With gluten free diets seemingly the new trendy diet, it’s important to always have some gluten free options when considering what cakes to make for people. 


One advantage of the newfound popularity of gluten free is it’s availability in mainstream shops. My local supermarket now have a full section of ‘free from’ products, including GF flour, oats, and so on. These wee cakes don’t need much specialized stuff, except GF baking powder. Polenta gives them a wonderful texture, and chocolate orange is a classic flavour that can’t be beat. Did you know that the famous Chocolate Orange was originally a chocolate apple?! You do now.



225g butter, softened

225g caster sugar

225g ground almond

110g polenta

1.5 tsp GF baking powder

5 eggs

1 tsp vanilla

Zest and juice of one orange


. Pre-heat oven to 160 degrees, and position a rack in the middle of the oven. Grease/line a cupcake tray or mould of choice.

. Beat together the butter, sugar and orange zest until light and fluffy. Weigh out all dry ingredients in a bowl.

. Add the eggs and dry ingredients together, then carefully combine, don’t over-mix or mixture will split. Fold in the lemon zest.

. Bake for 25 – 30 minutes, or until a skewer comes out clean. Allow to cool entirely before decorating.


Chocolate Fudge Icing:

250g butter, softened

275g icing sugar

1 tsp vanilla extract

175g dark chocolate, melted

Orange zest or chocolate orange pieces, optional

. Melt the chocolate in a heatproof bowl over a pan of hot water. Allow to cool slightly.

. Beat together the butter, icing sugar and vanilla until fluffy. Fold through the melted chocolate until combined.

. Pipe onto cool cakes and top with a pinch more orange zest, or chocolate orange segments.
